Dinning with Kale

I was introduced to Kale by my daughter three months ago and since then, I have had it more or less with my lunch every day. I have noticed a marked difference in my skin which certainly has a constant glow. I tried out my hypothesis by omitting Kale from my lunch and noticed after a few days that the glow on my face was diminishing. Although, my conclusion may not be clinically proven, I believe Kale is certainly beneficial for my skin. 
Do I have to eat it every day?  I hear you say.  No, you don’t if it will be a chore rather than an enjoyment …… Food should be savored. If you are keen on adding Kale to your regular meal, why not mix and match with different carbohydrates, fruit and Vegetable.

Here is a meal I put together; the preparation time was 20 minutes. It is very versatile, leave out the chicken for a vegetarian option.





Ingredients
Steamed Kale
Steamed Spinach
Sliced Cucumber
Chopped Empire apples ( Any type of apple will do)
Diced Avocado
Sliced Mushroom
Seasoning for mushroom: Olive Oil, Garlic and Ginger
Chopped Red and Yellow peppers
Cooked Pasta
Pasta sauce
Basil Pesto
Finely chopped Chili-Optional
Chicken – optional
Seasoning for chicken: Salt, Black pepper, Chinese Five Spice and All Spice


Kale and Spinach: I steamed a handful of Kale for 3 minutes in a sieve over a pot of boiling water on the hob and then added spinach. I steamed for a further 2 minutes. It’s best to take the sieve off the boiling water once cooking time is achieved to stop vegetable from losing nutrients.

Mushroom: Add Olive oil and chopped ginger to sliced mushroom. Simmer for 5 minutes and drain liquid.
Pasta: Add pasta sauce and Pesto to cook pasta. Add chopped yellow and red peppers (and chili if desired)
Chicken: Roasted Drumstick seasoned with salt, Black pepper, Chinese Five Spice and All Spice.
